Chicken Roll Stuffed with Lobster & Cranberries in Orange Sauce (by Guest Chef Salvatore Anzalone)A web-exclusive recipe from Italian Cooking and Living1 chicken breast
2oz fresh cooked lobster
1oz of dry cranberries soaked in warm water
chicken stock
salt & pepper
white wine
1 tablespoon butter
orange juice
Pound out the chicken breast flat. Add the lobster and the cranberries soaked in water to the breast. Roll it, dredge in flour, and fry in cooking oil. Deglaze the pan with the wine and the orange juice. Finish with the butter. Slice and serve. Serves 1.
