A native of Altamura in the region of Bari, in Italy, Executive Chef Bruno Milone of Ristorante Marco Polo, Brooklyn NY has always been greatly influenced by and interested in food and food preparation. Bruno attended the superiore scuola alberghiera “Armando Perotti” and has worked in some of the most illustrious kitchens throughout Italy.Having spent time in both the North and South of the peninsula, Bruno has gained a wide array of experiences and techniques that elevate his regional Italian specialties to the level of masterpieces.Bruno has worked in the world-renowned Ristorante Savini Biffi Scala of the Teatro alla Scala in Milan. He also won the prestigious Gambero Rosso while working in the kitchen at the Ristorante Venusto in Matera, and gained even more acclaim with his work as the Executive Chef at La Cascina in Rome. Bruno’s love for sharing Italian cuisine has brought him to the States and continues to inspire him every day. Often giving presentations, demonstrations, and seminars on regional Italian cooking, his focus remains on authentic recipes and gorgeous presentation. His work as the Executive Chef of Ristorante Marco Polo has won the 5 Star Diamond Award of The American Academy of Hospitality Sciences in 2004, 2005, and 2006, and continues to impress both loyal patrons and culinary professionals with his delectable culinary creations.
