Salvatore Anzalone

Salvatore Anzalone is single-handedly bringing the finest dishes of Italy's past back to the forefront. At Café Bondi, he's created a "culinary and cultural haven" as Francis R. Angelino of The Villager put it, where the culinary roots of his ancestral country play a starring role.

Anzalone is an expert at re-creating dishes lost in the midst of time. At Café Bondi, he's turned culinary history into the house specialty, focusing primarily on the ancient cuisines of Sicily. "What we've tried to do at Café Bondi" he explains, "is to pay homage to the fascinating and diverse traditions of Sicilian cooking. We worked for two years with a food historian in Sicily. Café Bondi offers dishes that date back to the 12th century.

They offer some unusual but delectable dishes such as pappardelle with chocolate sauce and chicken soup with North African spices and pounded almonds. Café Bondi has featured dishes made popular in Genoa before Columbus brought tomatoes back from the New World. At times his menus are enlightened by the cuisine of the 18th and 19th century Sicilian master chefs. Salvatore has recently opened a new Café Bondi in Staten Island.
