Paul Delios

A native of the greater Boston area, Paul Delios has found success and accomplishment in the food industry. With the opening of Paolo's Trattoria in April of 1999, Chef Delios' vision to create a menu that captures the culinary influences of Greece, France and Italy while using imported ingredients and locally grown organic vegetables served in a romantic and charming setting has been realized. As an avid traveler, Paul has used his personal travel experiences to expand his knowledge of European cuisine and fine wines. Paul serves as an owner and executive chef of Paolo's, his restaurant has garnered attention from such prestigious publications as Boston Magazine, The Boston Globe and The Boston Herald. Chef Delios has made several television appearances as a guest chef on the Warner Brothers network local morning show as well as New England Cable's very own Phantom Gourmet. In addition, he has hosted special dinners with and been hosted by Westport Rivers Winery and Vineyards' executive chef Kerry Downey-Romaniello.

For the better part of the last thirty-two years, Paul has been immersed in the restaurant scene one way or another. His cooking skills are in part a result of apprenticing under two generations of chefs. As a young man, he began to hone his culinary skills while working at his family's businesses, Mrs. Foster's Doughnut Shop in Sagus, MA. In 1990, Paul developed Rosamarina's Catering, a side business while managing Kanes Doughnuts. After attaining an exclusive contact in 1995 between Rosamarina's at the Nineteenth Hole. The restaurant and catering operations served the Golf Course and the surrounding community.

As a co-owner of Rosamarina's Catering, Paul won first place in the 1997 "Taste of Education" sponsored by Saugus Chamber of Commerce. After a trip to the Greek island of Chios, where his father grew up, he found himself inspired by the century-old wood burning oven that had been used by his grandfather for decades to make bread, meats and vegetables. In 1998, the concept of Paolo's Trattoria was developed and in April of 1999 was opened.
