Silverio Stefanini

Silverio Stefanini was born in Milan where he learned the industry from the many restaurants his family owned. He also attended school in Italy to learn about wines and is now considered one of the most knowledgeable restaurateurs on the subject.

Silverio is one of the few who puts together his own wine list. He also makes his own Grappa, decanting it into a larger bottle, adding berries, letting it steep for 60 days. He serves a complimentary glass of his homemade Grappa and dish of biscotti to every dinner patron.

The name Verderame comes from a porous stone that is steeped in water. The resulting liquid is sprayed on the grape vines, a "vitamin" for the grapes.

Silverio Stefanini is always at his restaurant, all day, every day. It is fast becoming a favorite of the UN diplomats and his neighbors in Sutton and Beekman Place.
