Potatoes in Parsley and Butter Sauce A web-exclusive recipe from Italian Cooking and Living|
2 pounds mixed baby potatoes
3 tablespoons butter
1 tablespoon all-purpose flour
3 tablespoons fresh parsley, minced
1 tablespoon lemon peel, grated
1 tablespoon fresh lemon juice
1 1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Peel the potatoes and cook them in a large pot of salted water
for about 20 minutes or until tender. Drain and put aside until the potatoes
reach room temperature. Melt the butter and add the flour, and the parsley.
Brown in a skillet over medium heat. Add the potatoes, lemon peel, lemon juice,
salt and pepper. Add some water and toss often for about 5 minutes. When the
potatoes are brown sprinkle with some parsley and serve. Serves 4
