Wine Biscuits From Italian Cooking and Living, December 2002/January 2003
These crunchy cookies take their name from the white wine
they're made with.
- 1 cup white wine
- 1 cup extra-virgin olive oil
- 1 cup sugar, plus 1/2 cup
- 51/2 cups flour
- 1/4 cup Mistrà (star anise liqueur)-or substitute anisette
- 11/2 tablespoons anise seeds
- 1 teaspoon salt
- 1 teaspoon cinnamon
Preheat oven to 350°. Mix together all ingredients except
the cinnamon and 1/2 cup of the sugar. Let the dough rest for at least 15 minutes,
then roll into logs about 4 inches long. Mix cinnamon and remaining sugar together,
and roll dough in this mixture. Bake for 30 to 35 minutes. Cool slightly, then
slice 1/2-inch thick, place on cookie sheets, and bake at 400° for 5 to 10 minutes,
until cookies dry out. Serve with a sweet dessert wine. Makes 30 to 40
