20 amaretti cookies
1 cup Amaretto liqueur
2 tablespoons butter
1 cup chocolate chips
1 cup whipped cream
4 strawberries, hulled and quartered
fresh mint for garnish
In a bowl, combine the cookies and the Amaretto liqueur, and soak for 5 minutes. Meanwhile, in a double boiler over high heat, combine the butter and the chocolate. Cook, stirring contantly, until the chocolate has melted, and set aside. To serve, arrange 5 cookies on each of the 4 plates. Drizzle with chocolate sauce, and top with whipped cream. Garnish with the strawberries and mint. Serves 4
