Crostini with Marinated Tomatoes

  • 12 slices Tuscan bread
  • 1/2 pound yellow tomaotes, chopped
  • 1/2 pound red tomatoes, chopped
  • 1/2 cup purple onion, chopped
  • 1/2 cup basil torn
  • 1/4 cup olive oil
  • salt and pepper
  • Spread the slices of bread out on a baking sheet and bake in a 400 oven until golden brown, about 15 minutes. Allow to cool. Combine the remaining ingredients together in a stainless steel bowl. Season with salt and pepper to taste. Allow the tomato mixture to marinate for at least 1 hour. Scoop the tomatoes onto a piece of crostini and serve. Serves 12
