Crostini with Marinated Tomatoes A web-exclusive recipe from Italian Cooking and Living
12 slices Tuscan bread
1/2 pound yellow tomaotes, chopped
1/2 pound red tomatoes, chopped
1/2 cup purple onion, chopped
1/2 cup basil torn
1/4 cup olive oil
salt and pepper
Spread the slices of bread out on a baking sheet and bake
in a 400° oven until golden brown, about 15 minutes. Allow to cool. Combine
the remaining ingredients together in a stainless steel bowl. Season with salt
and pepper to taste. Allow the tomato mixture to marinate for at least 1 hour.
Scoop the tomatoes onto a piece of crostini and serve. Serves 12
