Honey Cream A web-exclusive recipe from Italian Cooking and Living
1 cup heavy cream
2 teaspoons honey
Mix the cream and honey in a bowl. Whisk softly for a smooth
and silky consistency or use an electric mixer set at medium speed, to obtain
a firmer cream. Remember, if you over-whip the cream, it will separate. If this
happens, add 1 or 2 tablespoons of cream, and gently stir it in with a rubber
spatula until it reaches a smooth consistency again. Store in a covered container
in the refrigerator and try to eat it the same day, preferably within a few
hours of its preparation.
Variations: The honey cream can be flavored with the addition
of 1/2 teaspoon of any spice, like cinnamon, or any liqueur, like Grand Marnier.
Also, the type of honey you use will influence the flavor of this dessert.
