Asparagus and Grana Wrapped in Speck A web-exclusive recipe from Italian Cooking and Living
16 asparagus spears
6 paper-thin slices of speck
16 2 inch slivers of Grana Padano
Clean the asparagus thoroughly. Drop in salted, boiling water
for about 3 minutes, or until crisp tender. Drain and soak in ice cold water
to stop the cooking process. Drain and pat dry. Cut the speck slices in 1 inch
wide strips. Bundle together a sliver of Grana and a spear of asparagus and
bind them with a slice of speck. Serves 6
