RosolioA web-exclusive recipe from Italian Cooking and Living
- petals of 5 red roses
- 2 cups sugar
- 1/4 cup 90 proof alcohol or substitute with vodka
- 4 cups of water
In a mortar, crush the rose petals together with 1/2 cup of
sugar. Macerate the resulting paste in alcohol for 10 days. Combine the remaining
sugar with 4 cups of water; bring to a boil and cool. Pour over the rose paste
and stir well. Let macerate for 10 more days; strain, discarding the solids.
Makes 4 cups
