Classic Bruschetta From Italian Cooking and Living, June/July 2001
Bruschetta in its most basic form is topped only with olive
oil and sea salt; tomatoes and basil provide color and texture. If you don't
like the taste of raw garlic, don't rub garlic on the bread before spooning
on the tomatoes.
- 1 loaf country bread, cut into 1/2"-thick slices
- 4 garlic cloves, peeled
- 1 cup extra-virgin olive oil
- 2 ripe tomatoes, cut into 1/4" cubes
- 12 basil leaves, torn
- salt
Preheat a grill pan over medium-high heat for 5 minutes. Toast
the bread for 2 minutes per side, turning once; it should be browned on the
outside but still soft inside. Rub each slice of bread with the garlic. Drizzle
with the olive oil, top with the tomatoes and basil, season with salt, and enjoy
within minutes. Serves 8
