Cool Summer SundaeA web-exclusive recipe from Italian Cooking and LivingOn a blazing afternoon, serve the fruit directly out of the
freezer without thawing it first. The berries and mango cubes turn into self-contained
popsicles with a dense, flavor-packed core.
- 3 cups frozen sugared fruit
- vanilla ice cream
- sweet dessert wine, such as Malvasia or Vin Santo
- fresh mint sprig for garnish
Pour frozen fruit into 4 bowls. Top each serving with a scoop
of vanilla ice cream. Garnish with mint. Serves 4
Variation: For a hot fruit sundae, add 1/4 cup of fruit juice
(orange, pineapple, mango, etc.) to the frozen sugared fruit. Warm in the microwave
or on the stove over medium heat until hot, stirring constantly. To get a thick,
syrupy consistency, continue cooking for another 5 to 10 minutes. Pour over
vanilla ice cream. Garnish with mint and a splash of sweet dessert wine.
