Fried Mozzarella (Mozzarella Impanata) A web-exclusive recipe from Italian Cooking and Living
This satisfying appetizer takes on a delicate, oozy texture
if you use fresh buffalo mozzarella.
- 2 eggs
- salt
- flour
- 12 ounces fresh mozzarella
- bread crumbs
- olive oil
- 1/4 teaspoon dried oregano
Crack the eggs into a wide, shallow bowl, salt lightly and
mix with a fork. Spread a layer of flour onto a plate and spread out the bread
crumbs on another plate. Cut the mozzarella into slices no more than 1/4-inch
thick. Dip the cheese into the flour, making sure its whole surface is coated,
then into the egg mixture and finally into the bread crumbs. Heat a 1/2-inch
layer of olive oil in a high-sided skillet over high heat. When the oil is hot,
put in the breaded mozzarella and fry for 3 to 4 minutes or until golden, flipping
to cook both sides evenly. Let drain briefly on paper towels to absorb extra
oil. Serve hot, sprinkled with a pinch of dried oregano. Serves 4
