Crostini Di Provatura - Mozzarella and Bread Skewers with Warm Anchovy SauceA web-exclusive recipe from Italian Cooking and Living
- 10 ounces fresh mozzarella, cubed
- 1 loaf bread, cubed
- 1 stick unsalted butter, melted
- 2 salted anchovies, deboned and rinsed
- 2 tablespoons milk
Preheat the oven to 400°. Thread the cubed mozzarella and
bread on skewers, alternating them and starting and ending each skewer with
bread. Place in a roasting pan, not touching the bottom, and bake until the
mozzarella melts, about 20 minutes; brush with a little of the melted butter
twice during baking. Meanwhile, cook the anchovies in the remaining butter until
melted. Add the milk and keep warm. Arrange the skewers on a platter and pour
the sauce over them. Serve immediately. Serves 8
