Fried Peppers SaladA web-exclusive recipe from Italian Cooking and LivingFor the Salad:
1 red pepper, cleaned and sliced
1 yellow pepper, cleaned and sliced
1 green pepper, cleaned and sliced
1/2 cut extra virgin olive oil
For the Dressing:
Olives, pitted
capers
parsley
garlic
balsamic vinegar
salt
grated grana padano
Fry the peppers in the olive oil. Remove from heat and pat dry with paper towel to dispose of excess grease. Mince the olives, capers, parsley and garlic. Season everything with balsamic vinegar, salt and grated cheese. Mix well and pour over the peppers. Serves 4
