Stuffed Calamari
The rich, delicious flavor of fresh calamari is the perfect ingredient for many traditional Sicilian seafood dishes

  • 6 calamari
  • 2 tablespoons extra-virgin olive oil
  • 1 cup bread crumbs
  • 3 eggs
  • 1 teaspoon raisins
  • 1 bunch parsley
  • 3 garlic cloves, thinly sliced
  • 1/2 onion
  • tomato sauce
  • salt
  • pepper



Rinse the calamari. Detach the tentacles, cut them in small pieces, and place them in a pan over medium heat. Let the liquid that they release evaporate, add the olive oil, and let the calamari brown. In a bowl, mix the bread crumbs, the eggs, the raisins, the parsley, and the garlic, thinly sliced, the salt, the pepper and the browned pieces of fish. Stuff the calamari with this paste and fry them. In a separate pan, prepare some tomato sauce with the onion, browned in 1 tablespoon of olive oil, salt, pepper, and as much water as needed. Add the calamari and cook over low heat for about 20 minutes. Serve warm or cold, sliced.
