Hearty Tuscan CrostiniFrom Italian Cooking and Living, June/July 2002For a quick appetizer, spread some blended stew onto toasted
bread.
- 1 baguette or crusty Italian bread
- 3 cups Tuscan
beef stew
- fresh basil
- 12 cherry tomatoes for garnish
Preheat oven to 350°. Cut bread into 1/2-inch-thick slices,
arrange on a baking sheet, and toast in the oven until golden. Reheat 3 cups
of stew. In a food processor, pulse until blended, about 5 or 10 seconds. Spoon
sauce onto toasted bread slices and heat in the oven for another 5 minutes.
Garnish with fresh basil leaves or halved cherry tomatoes. Serves 6
