A panettone is a Milanese sweet bread made with raisins, pine
nuts and anise. It is commonly served around Christmas and is shaped like a
tall cylinder.
For the panettone:
- 1 pre-made panettone
- vanilla ice cream, slightly softened
- chocolate ice cream, slightly softened
For the sauce:
- 1/2 cup orange marmalade
- juice of 1 orange
Using a serrated knife, slice the panettone horizontally 1
inch from the bottom. Set the bottom part aside, and turn the panettone upside
down. Slice down all the way around, leaving about a 1-inch border. Scoop out,
and discard the inside of the panettone, leaving a hollow shell. Fill the panettone
with the ice cream: Spread a layer of vanilla ice cream into the shell, and
top with a layer of chocolate, pressing the ice cream against the walls of the
panettone. Repeat until it is completely filled. Replace the bottom slice to
cover the ice cream. Carefully turn the panettone over so it is right side up,
and place in the freezer for 2 hours. Meanwhile, prepare the sauce: In a saucepan,
combine the marmalade and orange juice. Place over low heat, and stir until
combined. Remove from the heat, and let cool. Transfer to a bowl, cover with
plastic wrap, and place in the refrigerator. When the panettone is firm and
ready to serve, slice it into wedges, and top with the orange sauce. Serves
