Onion RingsFrom Italian Cooking and Living, February/March 2005
vegetable oil for frying
3 large white onions
1 cup milk
flour for dredging
salt
In a deep skillet over high heat, warm 2 inches of vegetable oil. Slice the onions into thick rings, and soak in the milk for 10 minutes. Drain, and dredge in flour. Carefully lower the onion rings into the hot oil, reduce the heat, and fry until golden brown. (You may have to do this in batches.) Remove the onion rings from the oil, and drain on paper towels. To serve, sprinkle with salt. Serves 4
