Prosciutto RollsFrom Italian Cooking and Living, October/November 2004
1 cup crumbled Gorgonzola
4 ounces goat cheese
1/2 cup heavy cream
8 shelled walnuts, ground
8 chives, chopped, plus 8, blanched, divided
salt and freshly ground pepper
8 large slices prosciutto
(or substitute regular ham)
3 basil leaves, julienned
In a bowl, combine the Gorgonzola, goat cheese, heavy cream, walnuts and chopped chives, and season lightly with salt and pepper. Place a spoonful of the mixture on one end of each piece of prosciutto, and roll them up. Tie a blanched chive around each roll, place in a microwave-safe dish, and microwave for 10 seconds, or until the filling melts. To serve, arrange the rolls in pairs on a bed of basil leaves. Serves 4
