Salmon with CapersFrom Italian Cooking and Living, October/November 2003
- 1/4 cup capers packed in salt, rinsed
- 1 tablespoon chopped parsley
- 3 tablespoons extra-virgin olive oil
- salt and freshly grounded pepper
- 4 salmon fillets, skinless, about 4 ounces each, sliced in half
Finely chop the capers, and place them in a bowl. Add the parsley and olive oil, season with salt and pepper, and mix well. In a microwave-safe bowl, place 1 cup of water. Place in the microwave on high, and bring to boil. Spread each salmon fillet with the caper sauce, and arrange on a microwave-safe plate. Cover the plate with plastic wrap, and place it on top of the bowl of water in the microwave. Microwave on medium-high for 5 minutes. Serve with sautéed leeks. Serves 4
