Sausage and Chicken SkewersFrom Italian Cooking and Living, February/March 2004
- 6 links sweet Italian sausage, cut into 3/4-inch pieces
- 2 boneless, skinless chicken breasts, about 6 ounces each,
cut into 3/4-inch pieces
- 1 pound baby Yukon gold potatoes, scrubbed and sliced 1/4-inch
thick
- 1/4 cup extra-virgin olive oil
- salt and freshly ground pepper
- 1 tablespoon chopped rosemary
- 1 tablespoon chopped thyme
Preheat oven to 400°. Thread the sausage,
chicken and potatoes onto skewers, alternating them. In a large ovenproof grill
pan over medium-high heat, warm the olive oil, or light a grill. Season the
skewers with salt and pepper, and add them to the grill pan. Cook until well-browned
on all sides. Sprinkle with the herbs, and transfer to the oven. Cook for 10
minutes, and serve. Serves 4
