Almond Cookies (Alternate)

From Italian Cooking and Living, October/November 2004

    2 cups sliced almonds
    2 cups sugar
    1 1/4 cups flour
    4 eggs
    1/2 teaspoon cinnamon
    zest of 1 lemon
    3 tablespoons butter, at room temperature
Preheat the oven to 350°. In a bowl, combine the almonds with the sugar and 1/4 cup of water, and toss. Arrange the coated almonds on a baking sheet, and bake for 15 minutes, or until golden. Remove from the oven, and set aside to cool. Transfer to a food processor, and pulse until finely ground. Add the flour, eggs, cinnamon, lemon zest and butter, and process until smooth. Using a spoon, scoop walnut-sized portions of the dough onto a baking sheet lined with parchment paper. Bake the cookies for about 20 minutes, or until golden brown. Makes 30 cookies
